- Seitan burgers; This ingredient can be easily changed. Tofu works great for the recipe, or another vegan burger cut in small pieces, is perfect as well.
- Peanut butter; If you want to change it up a little, you can use almond butter to create an almond dressing instead of peanut dressing.

Peanut dressing rice bowl, Easy + Inexpensive vegan travel food
Ingredients
Rice Bowl
- 150 g Uncooked rice
- 500 g Broccoli Fresh or frozen
- 2 Seitan Burgers
Peanut Dressing
- 2 tbsp 100% Peanut Butter
- 1 tbsp Soy Sauce
- 6 tbsp Water
- 1 tsp Garlic flakes
Instructions
- Cook the rice according to the instructions on the package, and cook the broccoli in water until soft (approximately 10 min).
- While the rice and broccoli are cooking, mix all ingredients of the peanut dressing together with a spoon until a smooth texture.
- Cut the seitan burgers in smaller pieces. Fry the seitan pieces in a pan with one tablespoon of oil. Flip them around, and they are done when they are golden brown (approximately 5-10 min).
- Create the final bowl by adding half of the rice, half the broccoli and half the seitan to one bowl and the other half of all to the other. Drizzle half of the peanut dressing on top of each bowl and enjoy!
