This easy vegan Pasta Pesto Salad is perfect for a summer evening. You can eat it as dinner, but it is also good to eat at a barbecue. Going to a barbecue with a few vegan options? Then make this salad. Everyone will love it, vegans and non-vegans. You will have something that fills you up for the rest of the night. This recipe will give you 4 dinner portions with 2 lunch portions. If you just want it as a side, this will be enough for 10 people. This recipe is amazing for a hot summer evening, because it is light to eat and served cold.

This recipe is a simple recipe with a few ingredients, but it is easy to increase the ingredients to make it more special. Let me give you some suggestions:
- Toppings; You can add more toppings to this salad. You can add croutons, sun dried tomatoes, vegan cheese, pine nuts, fresh basil or some seeds like sunflower or pumpkin. All these ingredients can be added after the salad is assembled. They will make the salad more luxurious.
- Extra ingredients; You can also add more ingredients to the salad itself. Before you put in the pasta, you can add one of these ingredients if you desire. For example, cooked broccoli to increase the vegetables. Cooked small vegan chicken pieces instead of the schnitzel. Gherkins could also be added if you like that.

Pasta Pesto Salad, Easy to make on a summer evening
Ingredients
- 500 g Uncooked pasta
- 1/2 Cucumber
- 300 g Tomatoes
- 1/2 Iceberg Lettuce
- 3 tbsp Vegan Pesto
- 3 tbsp Nutritional Yeast
- 2 tbsp Vegan Mayonnaise
- 1/2 cup Cashew Nuts
- 4 Vegan Schnitzels for extra protein with dinner
Instructions
- Start by cooking the pasta according to the package. After it is done, let it cool down completely.
- Cut the lettuce in small pieces and add to a big bowl. Also cut the cucumber and tomatoes and add them in.
- Add the mayonnaise, pesto and nutritional yeast to the bowl and mix it well. Then add the cashew nuts and cold pasta to the salad and combine it all. The salad is done.
- For dinner, I love to fry one schnitzel per portion. After it is golden brown, cut it in pieces and add it on top of the salad to increase the protein intake.
