This Easy, flavorful Tex-Mex Bell Pepper bowl is the ultimate food for on the road. It is quick to make and perfect for a meal prep. It is perfect for a summer evening in nature or just on the couch, every scenery is suitable for this bowl.
This bowl is highly versatile. For this recipe, I used the Marinated Tofu recipe from my blog to create it. The bowl can be changed up by using your leftover veggies instead or extra with the bell pepper. We love the combination of Cauliflower, Onions and Red Bell Pepper as well. You can also add some Sweet Corn or Broccoli with the spice mixture. For Extra Add on, you can try avocado, lettuce or spice it up with Sriracha sauce. Before you start, prepare the marinated Tofu following this recipe, but cut the tofu into small blocks instead of slices. Continue with the next step while this is marinating.
Cook the rice according to the package information.
Slice the Bell Pepper and Onions into big chunks and add them to a pan.
Add the olive oil and Tex-Mex spice to the onion and bell pepper.
Sauté the onions and bell peppers until the onions glaze and the peppers are softened.
In the meantime or afterwards, if you only have one cooking spot, fry the tofu golden brown.
Dice and Slice the extra ingredients you want to add to the bowl.
Everything is ready and it is time to create your bowl. Start with adding rice, the onion/bell pepper mix, marinated tofu and last but not least the extra ingredients. Enjoy your meal.
