This delicious green bean and chickpea curry recipe is perfect to create in a camper. It is tasty and affordable! You might want to create this recipe soon. If you are traveling through more expensive countries, this is perfect. I used green beans from the freezer, which are pretty cheap. The recipe probably ends up costing less than 10 euros for 6 portions! But it even comes closer to 7.50euros, which is 1.25 euros per portion. This is an amazing price! Variants of the green bean and chickpea curry

This curry is amazing, but it could be that you do not like all ingredients. Here are some suggestions for alternatives in this recipe that are still awesome:

  • Rice; You can substitute the rice for noodles or quinoa if you desire that. You could also make 4 portions with rice and the other two with noodles, for example.
  • Green beans; The green beans can be substituted with cauliflower or broccoli. You could also use mixed vegetables from the freezer. All combinations are great to try. I love to use cauliflower with bell pepper.
  • Curry paste; Choose your favorite curry paste, it could be spicy or not. You could also only use spices. I love to use 2tbs of garam masala and 1tbs of tikka masala spices into this curry instead.
  • Chickpeas; Not excited about chickpeas? You could always use lentils, tofu or vegan chicken pieces for the protein instead. Make sure to add in some form of protein to make it more satisfied.
  • Extras; You can always fancy the dinner with some extra ingredients. In this recipe, I used peanuts, but cashew nuts are great as well. You could also add some tortillas on the side or some delicious naan bread to eat with it. To make it more spicy, you could use sriracha sauce or any other hot sauce. Squeezing some lime juice over the curry is also a tasty and fresh addition to make this recipe a little fancier.

This recipe is definitely worth a try for this price and taste!

How to make

  1. Rice

    Start by cooking the rice according to the instructions.

  2. Cut Vegetables

    After or in the meantime, cut the onions, garlic and bell pepper in small pieces. 

  3. Sauté
    Sauté the onions and garlic in a large frying pan with lid with the vegan butter. After a minute, add-in the bell pepper. Sauté until soften.
  4. Curry time
    Add to the frying pan the curry paste and stir it through. Add the chickpeas, green beans, chopped tomatoes, and coconut milk as well. Put on the lid and let it cook for approximately 15 minutes.
  5. Serving Time

    Add in the desired amount of rice in a bowl and cover it up with a generous amount of the curry. Top it up with a hand of salted peanuts. Keep the leftovers in the fridge or freezer to eat later. Enjoy!
