Green Bean and Chickpea Curry, Ultimate Camper Recipe for dinner
This delicious green bean and chickpea curry recipe is perfect to create in a camper. It is tasty and affordable!

- 400 g Dry rice
- 2 tbsp Vegan Butter or use olive oil
- 2 Onions small
- 3 clove Garlic
- 500 g Green Beans frozen or fresh
- 200 g Bell Pepper
- 2 tbsp Curry Paste use your favorite, I used Mild
- 1 can Chickpeas
- 1 can Chopped Tomatoes
- 1 can Coconut Milk
- 250 g Salted Peanuts serving tip
Start by cooking the rice according to the instructions.
After or in the meantime, cut the onions, garlic and bell pepper in small pieces.
Sauté the onions and garlic in a large frying pan with lid with the vegan butter. After a minute, add-in the bell pepper. Sauté until soften.
Add to the frying pan the curry paste and stir it through. Add the chickpeas, green beans, chopped tomatoes, and coconut milk as well. Put on the lid and let it cook for approximately 15 minutes.
Add in the desired amount of rice in a bowl and cover it up with a generous amount of the curry. Top it up with a hand of salted peanuts. Keep the leftovers in the fridge or freezer to eat later. Enjoy!
