This Plant-Based Wrap is one of our to go meals. It is so easy and delicious, it is also perfect for meal prepping.

Ingredients
  

Filling

  • 1 cup Dry Rice
  • 200 g Plant-Based Minced Meat
  • 2 Onions small or 1big
  • 3 clove Garlic
  • 250 g Bell Pepper
  • 1 can Sweet Corn
  • 1 can Kidney Beans
  • 1 tbsp Tomato Paste
  • 2 tbsp Taco Seasoning

To Serve

  • 8 Tortillas medium size
  • 1 jar Taco Sauce
  • 1 Cucumber
  • 200 g Tomatoes
  • 200 g Lettuce

Instructions
 

  • Start by cooking the rice according to the package.
  • In the meantime, slice the onions, mince the garlic and slice the bell pepper.
  • In a large pan with lid, add in the onions and garlic with 1tbs of olive oil. After 2 minutes, add in the plant-based vegan meat. When the plant based meat is almost done, add in the bell pepper for approximately 3 minutes.
  • Start by adding the tomato paste and taco seasoning to the pan with the meat, garlic, onions and bell pepper. Stir it through and let it sauté for 2 minutes. Afterwards, add in the sweet corn and kidney beans and let them heat up for approximately 3 minutes.
  • The filling is ready, now it is time to serve the wrap. Add the desired amount of rice and filling to a tortilla. Slice the cucumber and tomatoes and add them. Fill it up with some taco sauce and lettuce. Fold the wrap and enjoy!
