Delicious Fluffy Pancakes Breakfast
Up for a LOVELY, TASTY breakfast and willing to spend some time to make it? Then these Fluffy Pancakes are a perfect recipe for you! It is perfect to begin a slow day, spoil yourself with something EXTRAORDINARY or surprise your partner with a breakfast made with LOVE. With only FOUR ingredients that most of us have in our staples already. Can’t find vanilla sugar? Use vanilla extract instead. Want to switch up the flavor? Use cinnamon powder in the batter.

Pancakes Serving Ideas
These pancakes are even better when served with some TASTY TOPPINGS. You can eat them with sugar or jam, but you can also stack them and make them even more special. These are my favorite topping for these Fluffy Pancakes:
- Banana and maple syrup; Slice the banana and drizzle the maple syrup on top of the stack. Want to do more? It is also delicious to bake the banana with maple syrup and add them as a warm sticky topping onto your pancakes.
- Strawberries and chocolate; This is the perfect combo. Make a romantic meal for yourself or your love? Then this is the ULTIMATE topping. Slice up the strawberries and melt vegan chocolate to drizzle on top. You could also use vegan chocolate spread instead.
- Fresh fruit; Besides the fresh bananas and strawberries, other fresh fruits work amazing as well. Slice them up or make a fruit mix and put them on top. You can add some sugar as decoration on top.
- Warm red fruit; As last, don’t have any fresh fruit available? Frozen berry mix works great as well. Cook them with some sugar to sweeten it up until they are warm. Pour it over your pancakes, and they will taste AMAZING.

Fluffy Pancakes, Best way to Begin a Lovely day
Ingredients
- 1 cup Self-raising flour
- 1 cup Soy milk
- 1 tbsp Baking powder
- 16 g Vanilla sugar
Instructions
- Combine all ingredients in a bowl and mix it all together, until there are no clumps. The easiest is to use a blender, but a fork will work as well.
- Heat up oil in a pan and wait until it is hot. Add in a big spoon of the pancake mixture, I create three pancakes at the time in a 24-inch pan. Bake until the pancakes becomes dry on the top. Flip them around and bake until the other side is golden brown as well. It takes around 2.5 minutes each side. This batter makes approximately 12 mini pancakes.
