Create the ultimate Summer Bowl
This Easy, flavorful Tex-Mex Bell Pepper bowl is the ultimate food for on the road. It is quick to make and perfect for a meal prep. It is perfect for a summer evening in nature or just on the couch, every scenery is suitable for this bowl.
Which ingredients can you add ?
This bowl is highly versatile. For this recipe, I used the Marinated Tofu recipe from my blog to create it. The bowl can be changed up by using your leftover veggies instead or extra with the bell pepper. We love the combination of Cauliflower, Onions and Red Bell Pepper as well. You can also add some Sweet Corn or Broccoli with the spice mixture. For Extra Add on, you can try avocado, lettuce or spice it up with Sriracha sauce. As you can read, this recipe is perfect to mix around with and not get bored with it. Enjoy your creations.

Versatile ideas for Tex-Mex Bell Pepper Bowl
Want to change it up a little, check out the following changes:
- Tempeh bowl; Instead of using the tofu, try using tempeh with the recipe for Sticky Tempeh. The tempeh has another structure and gives a bite to the bowl.
- Tex-Mex Bell Pepper Wrap; Want to have something extra? You can wrap up all ingredients to make a perfect wrap, or you can add all except the rice. This gives a different eating experience to this recipe, but the taste is still amazing.
- Quinoa bowl; Not a fan of rice ? Try this bowl, but use quinoa instead. This will pair great as well.
- Noodles bowl; This recipe is perfect to eat with noodles. Take your favorite noodles; soba, udon or rice noodles and use those instead of rice.
This recipe is perfect to batch create in advance and enjoy when you want it. The best part is that everyone gets to create their own bowl and can choose the toppings and quantity themselves! Enjoy your meal.

Tex-Mex Bell Pepper bowl, Full of flavor + Easy to Make
Ingredients
Essential
- 1 Quantity of the Marinated Tofu
- 1 cup Dry Rice
- 500 g Bell Pepper
- 1 Yellow Onion
- 2 tbsp Tex-Mex Seasoning Taco Seasoning
- 2 tbsp Olive Oil
Extra Ingredients
- 1/2 Cucumber
- 1 Spring Onion
- 10 Cherry Tomatoes
Instructions
- Before you start, prepare the marinated Tofu following this recipe, but cut the tofu into small blocks instead of slices. Continue with the next step while this is marinating.
- Cook the rice according to the package information.
- Slice the Bell Pepper and Onions into big chunks and add them to a pan.
- Add the olive oil and Tex-Mex spice to the onion and bell pepper.
- Sauté the onions and bell peppers until the onions glaze and the peppers are softened.
- In the meantime or afterwards, if you only have one cooking spot, fry the tofu golden brown.
- Dice and Slice the extra ingredients you want to add to the bowl.
- Everything is ready and it is time to create your bowl. Start with adding rice, the onion/bell pepper mix, marinated tofu and last but not least the extra ingredients. Enjoy your meal.
