This Broccoli stir-fry noodles recipe is perfect to create while traveling. You can create it in one pot, and it is quick, easy and yummy! This noodle recipe is perfect to create alternatives for this dish. Here are some examples for substitutes in this recipe:
- Meat substitute options; In this recipe, I used the Sticky Tempeh recipe, but you can also use other ingredients. This marinated tofu recipe is also a great option if you do not have access to tempeh. Or try to make Soy protein pieces with spices. Another one is to add in vegan chicken pieces. All options will create a tasty, quick dinner for you.
- Noodles options; You can switch up the noodles with different kinds. Use quick noodles, Udon noodles, Soba Noodles or Rice noodles to create this recipe. Choose your favorite one and adjust the water to the noodles you add, some noodles are thicker and need more water to make them soft.
- Vegetables options; You can switch the broccoli for another vegetable if you desire. Some really tasty alternatives are bean sprouts with snow peas, green beans, or bell pepper with mushrooms. You can use fresh ingredients, but frozen vegetables work great as well and will probably make the dish cheaper to create.

Broccoli stir-fry Noodles, Ultimate recipe for a tasty dinner
Ingredients
- 1 Portion of the Sticky Tempeh recipe on the blog
- 200 g Noodles pick your favorite
- 2 cup Water
- 500 g Broccoli fresh or frozen
- 2 tbsp Olive Oil
- 3 tbsp Kecap Manis
- 2 tbsp Soy Sauce
- 1 tsp Ginger
- 1/2 tbsp Garlic flakes powder or fresh garlic works as well
- 2 tbsp Sriracha sauce optional
- 100 g Cashew nuts optional
Instructions
- Prepare the recipe for sticky tempeh. Make little blocks instead of slices.
- Fry the tempeh in the olive oil until golden brown, this takes approximately 5 minutes. Then add in the Broccoli and sauté for another 5 minutes.
- After the broccoli and tempeh have sautéed, add the noodles to the same pot and add in the spices, sauces and water. Let it cook for about 5 minutes with the lid on. Afterwards, continue cooking but remove the lid and stir the noodles to prevent them from sticking to the bottom for about 3 minutes.
- The noodles are done. Add them to a bowl and add the optional sriracha sauce and cashews. Enjoy!
