Simple Seitan recipe
Seitan is a great meat alternative, and it is easy to make at home. It can be used in different ways, and it is great to create snacks. As well, seitan is full of protein, because it has 25gr protein per 100gr. This recipe is also soy free and zero-waste. So, this is my go to seitan chicken recipe, it is easy to make and only needs three ingredients.
How to make seitan chicken from scratch
It is easy and cheap to create seitan from scratch, because you only need vital wheat gluten, vegetable broth and nutritional yeast to create the base recipe for seitan. You might be wondering where to buy vital wheat gluten? You can find them in bio-stores, and certainly in bulk in online shops. To let the seitan taste more like chicken, you can use vegan chicken broth instead of vegetable broth in this recipe. Some recipes call for soy-sauce, but this is a seitan recipe without soy sauce.
Finally, to create the seitan, combine the vital wheat gluten with nutritional yeast. Afterward, add the vegetable broth and knead the dough. Make sure to tear the dough during kneading and to knead as short as possible. All the dry parts should be gone, and the dough should be airy. Then you need to tear the dough apart in pieces. Finally, How long to cook seitan? Simmer it for one hour and the easy seitan chicken is done.

How to use this base Seitan
There are different ways to use vegan seitan chicken. Thus, these are my favorite ways to use this Seitan chicken meat alternative:
- Seitan chicken nuggets; Firstly, seitan chicken are one of our favorite snacks with sweet potato fries and vegetables. It is also great to snack during a game or movie night. You can create them by coating small seitan pieces in bread crumbs and frying them in a pan.
- Seitan chicken burgers; Secondly, vegan chicken burgers are a great way to use this base recipe. In short, coat the larger pieces (the base recipe makes 6) in bread crumbs and fry them in a pan. This tastes without a doubt amazing on a burger bun with some vegan mayonnaise, lettuce and tomato. Check out the recipe here.
- Seitan chicken pieces; Lastly, the base recipe is great to substitute chicken pieces in any recipe. Just cut the seitan into the size you need and use them in the recipe. These are great, for example in this delicious rice bowl recipe.

The most easy Vegan Seitan Chicken recipe
Ingredients
Dough
- 1 cup vital wheat gluten
- 1 tbsp nutritional yeast
- 1 cup Vegetable Broth
Cooking
- 1.5 l vegetable broth
Instructions
- Combine the vital wheat gluten and nutritional yeast in a bowl and mix it.
- Add the broth to the dry ingredients and knead it. Make sure you only loosely knead the dough, over kneading leads to a gummy structure. Make sure there are no dry spots in the dough. I tear the dough during kneading to make sure it is still loose. If there are still dry areas, add a little bit more broth.
- Add the broth to a pot and let it heat until it boils. Tear the dough in pieces and add them to the broth. You can make small pieces or bigger burger pieces (approximately 6 burgers). Let this simmer over low heat for an hour. Your seitan is ready to further use in recipes as chicken pieces or burgers. Do not pour the broth away, you can use it to cook your pasta, rice or for any recipe that requires broth.
