Perfect substitute for egg salad
Missing your favorite egg salad when you went vegan? Look no further. This is a perfect substitute. The mayonnaise and mustard make the tofu mash up perfectly saucy, like an egg salad. Eggs have high protein values, but so does tofu. In 100gr of Firm Tofu, there is 17gr of protein compared to 100gr of boiled eggs which has 13gr.*1 Firm tofu also has less fat, no cholesterol and more fiber than boiled eggs. Using tofu for your salad can even be considered healthier than boiled eggs.

Spice it up
This is a basic recipe, but it can be spiced up like you want it. You can add in some garlic and chili flakes to create a spicy salad. Or try to add vegan cheese spice or vegan bacon spice to create a more cheesy bacon salad. It is also very tasty to add in some herbs like chives, basil, or parsley.
How to use the Tofu Salad
This Tofu Salad can be used in different ways, here are some of my favorites:
- Tofu Salad sandwich; This one is the ultimate match. A fresh bread or small baked bread is the perfect combination with this salad. You can top it up with some fresh cucumber, tomato, and lettuce. You can also add some pickles for a slightly sour taste.
- Wrap it up; Easy and quick to make is to insert the salad in a tortilla and fold it together. You can take this also on a hike and eat it at a beautiful destination.
- Green salad topping; This salad can be used as a topping on a green salad to add in some protein and flavor.
- Knäckebröd; since we are currently in Sweden, this is one of the suggestions. A crispbread with a soft, flavorful tofu salad is perfect as a snack or lunch.

Simple Tofu Salad, For Traveling and on the Ultimate Hike
Ingredients
- 200 g Tofu
- 1/4 cup Mayonaisse
- 1 tbsp Mustard
- 1 tsp Turmeric
- 1/4 tsp Salt
- 1/2 tsp Pepper
- 1 tsp Smoked Paprika Powder optional
Instructions
- Press the liquid out of the tofu block. You can use your hands or a tofu press. Mash the tofu with a fork until there are only small pieces left.
- Add in the mayonnaise and mustard. Toss in all the other spices and mix it well.
- Serve the tofu salad as preferred. Read the post for some suggestions.
